  • 4 cups chicken or vegetable broth (32 oz.)
  • 1 cup heavy cream or half & half (8 oz.)
  • 1 cup shredded cheddar cheese (4 oz.)
  • (optional vegetable additions: 2 cups chopped, fresh or frozen broccoli or cauliflower, or 5 oz. package fresh baby spinach plus 1 cup broth, as needed

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat. Stir in soup mix and optional vegetable additions, plus 1 cup broth, as needed.
  2. Return to a simmer, cover, and cook for 30 minutes.
  3. Remove from heat. Stir in cream and cheese. Return to stovetop, cover, and cook on low for 10 minutes.
  4. Stir in cream and cheese, cover and keep on low heat for 10 minutes longer.
  5. For thicker soup use a hand immersion blender to puree the soup, or gently mash the vegetables with a fork, stir well, and serve.

    Wow! With a Twist

    We made your broccoli soup and added a few things and my husband asks weekly when we're going to have it again! LOL We followed the directions, then transferred the soup to crocks (the ones we use for french onion soup that hold up in the oven) - then we got some thick cut provolone cheese and covered the soup with 2 slices (used the cheese as a moisture barrier) - THEN we mixed up a package of Red Lobster Cheese biscuits and dropped the raw dough on top of the cheese - and baked it until the biscuits were done (they completely covered the top of the crock) and then brushed the herbed butter that comes with the biscuits on top. Let me tell you !!! WOW!!! It was so good. Thanks again - we love your products. -Chris

    Absolutely yummy!! Easy to make and both me and my husband loved it. I added a package of frozen broccoli to it which I think made it. Really got some broccoli taste in there. Delicious !!! Can’t wait to make another one !!

    I received this soup mix as a gift. I made it and it is wonderful. I added 2 cups frozen broccoli and 5 ounces of spinach. It has a wonderful flavor. I have ordered more soup.

    The package I got did not look like the one on display. Mine had a lot of red bell pepper. I ended up picking them out as it was simmering and the soup still had a strong taste of the peppers. The main flavor should be the broccoli.

    Made this for the first time last night. It's thick and hearty and very tasty. I'm not a fan of the peppers, will pick those out next time, but the rest was perfect.
