Corn Pasta, Rice, Carrot, Parsley, Green Onion, Corn, Celery, Bell Pepper, Tomato, Garlic, Bay Leaf, Sage.

  • 2 tbsp Olive oil
  • 1 Medium onion, chopped
  • 8 cups Chicken or vegetable broth
  • 10 oz Box frozen baby or petite peas
  • 1 tbsp Lemon juice
  • Optional: Leftover turkey meat, cut up (also add 2 cups water if adding turkey)

  1. In a 4-quart pot, sauté chopped onion oil over low heat for 5 minutes.
  2. Add contents of Ohio Valley Vegetable Soup Mix and toss lightly.
  3. Add broth and stir, Add cut up chicken or turkey, if desired.
  4. Bring to a boil. Reduce heat and simmer, covered, for 15 minutes, stirring occasionally.
  5. Stir in contents of the pasta packet, and return to a simmer, covered for 20 minutes.
  6. Add lemon juice and peas, continue to simmer for 2-3 minutes uncovered, and serve this bountiful medley of summer vegetable in any season.

    I had ordered different soups from you and we love them all. After conquering Stage IV cancer, I only eat organic vegetables and it's a bit unfortunate your ingredients are not all organic. Especially vegetables like peppers can be heavily sprayed. But I still love your soup and I will keep ordering. Thanks! ***Anderson House Reply***First off, congratulations, that is so awesome! Secondly, we also wish we could offer more organic ingredients but with 100+ dry ingredients we often cannot source them. Thank you!

    Greetings, I was gifted a package of this soup. I made it with vegetable stock and cooked it for a bit longer than recommended. It was ABSOLUTELY DELICIOUS!!! Just thought I'd share this good news with you.

    I love your soups….We are presently enjoying your Ohio Valley Vegetable. I add to the mix and end up with a lobster pot full of soup. I was even able to freeze a large container…Your soups are wonderful and I have given many as gifts over the past 28 years and told hundreds of people about them ….. There is nothing like a hot bowl of soup on a cool evening….

    I recently got this soup when I stocked up on a bunch for the cold weather. I served it up and my husband really liked this new variety (for us) and the pasta is Gluten Free so perfect for my husband. I think we'll be adding this to the mix this season. Just a note of thanks because we only adjusted to being a GF household in the past 4 years, so it has been a bit rough to switch recipes or products that we used to like and now need to replace with other options. Your company provides so many options!
