  • 4 cups chicken or vegetable broth (32 oz.)
  • 1 cup heavy cream or half & half (8 oz.)
  • 1 cup shredded cheddar cheese (4 oz.)
  • (optional vegetable additions: 2 cups chopped, fresh or frozen broccoli or cauliflower, or 5 oz. package fresh baby spinach plus 1 cup broth, as needed

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat. Stir in soup mix and optional vegetable additions, plus 1 cup broth, as needed.
  2. Return to a simmer, cover, and cook for 30 minutes.
  3. Remove from heat. Stir in cream and cheese. Return to stovetop, cover, and cook on low for 10 minutes.
  4. Stir in cream and cheese, cover and keep on low heat for 10 minutes longer.
  5. For thicker soup use a hand immersion blender to puree the soup, or gently mash the vegetables with a fork, stir well, and serve.

    Made this for the first time last night. It's thick and hearty and very tasty. I'm not a fan of the peppers, will pick those out next time, but the rest was perfect.

    I added a whole bag of frozen broccoli to this and the kids loved it! Top it with a sprinkle of shredded cheddar. Easy way to get kids to eat veggies!

    I added fresh broccoli, some carrots, onion, garlic and celery to this soup. It was the best. I didn't have half and half or cream but used one cup of evaporated milk instead. i also added a little grated parmesean cheese to the recommended amount of shredded cheddar cheese. agreat meal by itself or with a sandwich. My son added sliced beer brats to his soup.

    We recently discovered your soup mixes and have tried three (Arizona Sunset Enchilada Soup, Idaho Outpost Potato Leek Soup & tonight, the Virginia Blue Ridge Broccoli Cheddar Soup). Whole family loved them all. Especially great for us is that the ones we have tried are vegetarian, so we can easily substitute vegetable broth/bouillon for chicken broth, and vegetarian protein options (by Boca, Gardein or Quorn) that mimic the meat the package calls for, and in half an hour we have delicious vegetarian soup! Next we will try the Jambalaya (made with What, ham substitute, and vegetarian "shrimp." Can't wait to try all the varieties! -Kerri Bradley

    Our 6 year old grandson not only loved the broccoli soup, but actually asked to eat the left-overs the next day!!!
