Red Bean, Navy Bean, Cranberry Bean, Split Pea, Carrot, Bell Pepper, Celery, Curry Powder (Coriander, Fennel, Cumin, Turmeric, Fenugreek, Red Pepper, Black Pepper), Garlic, Basil.

  • 8 cups chicken broth (64 oz.)
  • 2 cups water (16 oz.)
  • 12 oz Chicken apple sausage or other specialty sausage, cut up
  • 2 Firm apples, such as Gala, peeled and diced (3-4 cups)
  • 5 oz baby spinach, roughly chopped (about 5 cups), or 1 box frozen chopped spinach

Preparing the Soup:

  1. Rinse, drain, and pick over beans. Remove discolored, shriveled beans and any foreign material. Rinse well.
  2. Place beans in 6 or 8-quart pot. Add broth and water. Bring to a boil, reduce heat, and simmer covered for 1 and a 1/2 hours.
  3. Slice the sausage lengthwise and then crosswise into half circles. Add to the pot with the contents of the soup mix vegetable packet. Bring to a boil, reduce heat, and simmer covereed for 30 minutes.
  4. Add diced apples, return to a simmer and cover for 5 minutes. If using frozen spinach, add with apples.
  5. Stir in fresh spinach for 1 minutes, and serve.

    Crunchy beans

    Title says it all. I made this recipe for the directions on the package, simmering and boiling for the prescribed amount of time. But things were still crunchy. I do live at a rather high elevation, so am I doing something wrong? ***Anderson House Reply*** Hi, so sorry for your crunchy beans, but yes, high altitude is the likely culprit as it allows for water to boil at a lower temperature which means the beans won't reach their ideal temp to rehydrate and soften. The other factor could be hard water? Try soaking beans overnight before using or trying a pressure cooker if not soaking. Call 847.688.1200, we'll make it right.

    Pleasantly surprising

    I never buy any mixes or starters for anything I cook. However my daughter gave me this one and I was surprised at how good it was and a time saver! I used apple sausage with honey crisp apples however I didn’t add spinach substituting turnip greens instead and it was delicious! I’m purchasing more for myself and gifts for friends.

    Apple Sausage and Bean Soup

    I got this soup to try because my teenage grandson just had surgery and has to be careful what he eats. He likes chicken sausage but has never been a bean fan, or even a soup fan. I have to go low salt and gluten free, and neither of us can eat dairy. So it’s amazing to find something we both can have, especially that we both like! We finished the first batch yesterday. I went back and bought three more, and am making it again tomorrow. It’s fresh and tasty, and not heavily processed. I love that it has fresh apples in the recipe.

    Just purchased your Apple Sausage & Bean mix and I cannot APPLAUD you enough for keeping the sodium LOW! It is so hard to find soups of this caliber!
