Green Lentil, Red Lentil, Rice, Carrot, Onion, Celery, Leek, Paprika, Basil, Oregano.

  • 1 Tbsp. olive oil
  • 1 lb. mild Italian sausage
  • 12 cups beef broth (96 oz.)
  • 1 can petite diced tomatoes (29 oz.)
  • 3 medium zucchini, diced (4 cups)
  • 1 cup red wine (optional)

  1. Pick through the lentils. Remove discolored, shriveled lentils and any foreign material. Rinse well.
  2. In a 6 or 8-quart pot, heat olive oil.
  3. Crumble and brown mild Italian sausage in oil.
  4. Stir in contents of vegetable & seasoning packet.
  5. Stir in broth and lentils. Bring to a boil. Reduce heat, cover, and simmer 30 minutes.
  6. Add tomatoes, zucchini, and red wine. Bring back to a simmer, cover, and cook 30 minutes.

    I received a bunch of soup mixes as a gift. I wasn’t too sure about this one specifically, but it’s SO GOOD. This one really surprised me! I’m not a zucchini fan, so I used the “inventive” version of the recipe and subbed in orange bell peppers. I also threw in one diced onion, too. Garnished with fresh chives & a bit of Monterey Jack cheese. This is a great mix for both summer and winter seasons.

    Great Soup!

    I just made this soup in a crock pot. Worked really well and was great. i did add carrots and onions along with the specified ingredients. I only used 4 cups of beef broth instead of 6. It came out well. In general with the crock pot I find about 2/3 of the broth is required. You end up with a huge amount of soup. I ate it for 4 days then decided I needed some variety and froze the remainder. I cooked the sausage in advance before placing in the crock pot. Soup was easy to make. I did add crushed red peppers to it when I ate it.

    I didn't have zucchini but added chopped carrots in the first half hour, then fresh kale in the second half. My family absolutely LOVED IT! The sales rep at the One of a Kind Show recommended this as his favorite. My husband said, "This soup was top notch!" I will definitely be back for more.

    I picked up your soup mix at my local Ace Hardware. Based on the directions and my need to look beyond I added additional celery, onion and green pepper. The sausage was a home town favorite and I substituted dark beer for the red wine. Fantastic soup….

    I was recently in Florida and went into a very cool store, but mostly sold oils and vinegars (and I do not like neither category). I did come across your frontier soups, and thought the packaging was great which caught my eye. I purchased the Indiana harvest sausage and lentil soup. I must tell you that I am probably gonna be pickiest people in the world as far as food goes. I am a good cook and enjoy cooking. This past weekend, I made a pot of soup from your mix. It was DELICIOUS!!!!!! I just wanted to share that with you because coming from someone like me, that is a huge compliment … LOL!!!
