  • 4 tbsp Butter
  • 1 cup Onion, chopped
  • ¼ cup Flour (or 2 tbsp cornstarch for gluten free)
  • 6 cups Chicken broth
  • 2 - 3 cups Cooked chicken, cut up
  • Freshly ground pepper
  • Optional: 2 - 3 cups Leftover turkey meat, cut into 1/2 inch cubes may be substituted for chicken

  1. In a 4-quart pot melt butter and sauté onion 5 minutes.
  2. Add flour or cornstarch, stir continuously for 30 seconds to form paste.
  3. Stir in broth and bring to a simmer. Stir until thickened.
  4. Add contents of Colorado Campfire Chicken Stew Mix and chicken (or turkey).
  5. Bring to a simmer again, cover and cook 30 minutes.

Serve this thick-as-pot pie soup with biscuits on the side!
Soup will thicken if made ahead, may want to add 1 or 2 cups more broth when serving.

    Good morning! Just wanted to say how much I enjoyed your "Colorado Campfire" Chicken Stew over the last week. I haven't had a better off-the-shelf stew mix and we really appreciate that you don't add salt...we can do that on our own to taste! Keep up the great work!! I'm cooking up a batch of "Dakota Territory" beef barley stew as I write this. Perfect for a snowy day in Virginia.

    It's A Pot Pie For Two!

    I used shredded chicken and reduced the amount of broth then refrigerated until the next day. I scooped out a desired portion into two au gratin dishes and made crusts from a boxed pie crust mix. I rolled out two crusts and topped each dish so the crust would just overhang the dish rim. (One box made two crusts). Then brushed with an egg wash and vented the crusts. Placed the dishes on a cookie sheet and loosely covered with foil, baking at 375 degrees for15 minutes, then removed foil and continued to bake for an additional 20 minutes until crusts were golden brown and stew heated through. There's plenty of stew to make a few pot pies or just add more broth for stew in a bowl!

    We found this soup to be pretty bland. Disappointing considering how much we have liked others. I doubt I will buy again. If I did buy again I would add some additional spices. ***Anderson House Reply*** Due to the ingredients in the mix and the roux that is made in this recipe, this is one soup that we think does need a little salt. We would not recommend using low-sodium or organic broth. If so, you may need to supplement with a little salt & pepper. We always encourage using as little salt as possible but it does add a lot of flavor.
