Red Lentil, Carrot, Onion, Crystallized Ginger (Ginger, Cane Sugar), Turmeric, Cumin, Garlic, Cardamom, Cinnamon, Cayenne, Black Pepper, White Pepper, Allspice.

  • 2 lbs. whole carrots, scrubbed, not peeled
  • 4 cups vegetable or chicken broth (32 oz.)
  • 1-2 Tbsp. brown sugar
  • 1 can coconut milk (14 oz.)(omit for a simple pureed version or substitute cream)

  1. Wash thoroughly and cut carrots into 1-inch chunks. Remove ends.
  2. In a 3 or 4-quart pot, bring broth and carrots to a boil. Reduce heat and stir in soup mix and brown sugar.
  3. Return to a simmer, cover and cook for 30 minutes.
  4. Using a hand immersion blender or hand mixer in the soup pot, or in batches in a food processor, puree soup, leaving some little pieces for texture.
  5. Return soup to pot, add coconut milk, cook on low 5 minutes and serve.

    Amazing Gingered Carrot Soup

    I purchased the Ginger Carrot soup at Poppy & Thyme in MF WI. I used 1.5 lbs of carrot and 1/2 pound sweet potatoes. On a recent trip to Iceland I learned that they sweeten soups with mangos so instead of the brown sugar I used 1 cup of fresh mangos. It turned out amazing! On the second bowl I added 1tsp of massaman paste and put chopped peanuts on top as I love Thai cuisine. As I have read in other reviews it is very versitile as a stand alone or with many add ins. Tomorrow I will thin out and add a few rice noodles and baked tofu. Will definitely purchase again.

    Thank you for your wonderful, healthy soups. I am gluten free due to a health issue and it was by chance I saw your product at The Elegant Farmer in Mukwonago, WI. I absolutely love your soups. I’m sitting here eating your gingered carrot & coconut. I think this is my favorite!

    The Ginger carrot was so awesome and was so amenable to substitutions, additions, etc. I added half of a sweet potato and some homemade applesauce a few days after making the soup—great idea and also added lime and cilantro on another day. It seemed to last forever and I even froze some.

    To paraphrase Will Rogers, I never tasted a Frontier Soup I didn't like. But I will admit I always amp them up a bit. In this case I added a diced Sweet Potato and shredded Chicken Breast meat, as suggested in the Recipe Variations. It was a huge success, and I am looking forward to making it again, for friends.
