Green Lentil, Red Lentil, Rice, Carrot, Onion, Celery, Leek, Paprika, Basil, Oregano.

  • 1 Tbsp. olive oil
  • 1 lb. mild Italian sausage
  • 12 cups beef broth (96 oz.)
  • 1 can petite diced tomatoes (29 oz.)
  • 3 medium zucchini, diced (4 cups)
  • 1 cup red wine (optional)

  1. Pick through the lentils. Remove discolored, shriveled lentils and any foreign material. Rinse well.
  2. In a 6 or 8-quart pot, heat olive oil.
  3. Crumble and brown mild Italian sausage in oil.
  4. Stir in contents of vegetable & seasoning packet.
  5. Stir in broth and lentils. Bring to a boil. Reduce heat, cover, and simmer 30 minutes.
  6. Add tomatoes, zucchini, and red wine. Bring back to a simmer, cover, and cook 30 minutes.

    I'm not a big soup person but I bought this on a whim a few years ago and I've been buying it every winter since. Turned into a tradition where I make this the first snow of the season. Made it for family and they wanted the recipe. Layers of flavor, rich, hearty, and I like to add a little extra spice. Tastes like it took hours to make. Whole house smells amazing too. Bring on the snow!

    Somewhat bland

    The soup is somewhat lacking in flavor. I managed to improve it slightly with a sprinkle of white wine vinegar but ultimately it may have needed more salt. What was additionally disappointing was the choice of zucchini as it literally disintegrates and turns into “mush” . It would also benefit from the addition of garlic either sautéing or during the browning of the sausage and/ or adding whole cloves during the cooking process.

    This soup is soooo delicious ! It makes a BIG pot which I loved. I used red and orange bell peppers instead of the zucchini and my family suggested that next time I should also add carrots and celery carrots !!
