Green Lentil, Red Lentil, Rice, Carrot, Onion, Celery, Leek, Paprika, Basil, Oregano.

  • 1 Tbsp. olive oil
  • 1 lb. mild Italian sausage
  • 12 cups beef broth (96 oz.)
  • 1 can petite diced tomatoes (29 oz.)
  • 3 medium zucchini, diced (4 cups)
  • 1 cup red wine (optional)

  1. Pick through the lentils. Remove discolored, shriveled lentils and any foreign material. Rinse well.
  2. In a 6 or 8-quart pot, heat olive oil.
  3. Crumble and brown mild Italian sausage in oil.
  4. Stir in contents of vegetable & seasoning packet.
  5. Stir in broth and lentils. Bring to a boil. Reduce heat, cover, and simmer 30 minutes.
  6. Add tomatoes, zucchini, and red wine. Bring back to a simmer, cover, and cook 30 minutes.

    I have been making large amounts this soup for over 5 years and freeze much of it for future use as we really love it. I use two pounds of sausage instead of one and use lots of fresh spinach instead of Zucchini so the soup is very hearty. It freezes very well.

    I was looking for a good sausage and lentil soup mix as I don’t always have time or the mind to think of everything at the store. THIS right here was the best one so far! I recommend supplementing with spicy Italian sausage but that’s about it!

    This is such a good, healthy—unless you’re a vegetarian /vegan—soup mix. I’ve made it several times for my family but since there’s so much, I always share it with someone . When my mom was in a care home, I brought a whole kettle of this for the caregivers and residents. It was a big hit. And the caregivers appreciated a day off from cooking! The only substitute I make is using Kale instead of zucchini. I’ve used zucchini, but my family likes the kale better. It’s really a versatile recipe. The local market doesn’t always have this “kit”, but I grab one when I see it! Thank you! Keep it in stock, please!

    I used 1 cup of dry, red wine with the beef broth & substituted diced, sweet bell pepper for the zucchini. In addition, I added two bunches of organic, chopped, flat leaf parsley in the last 30 minutes of cooking, as well. A very tasty, savory soup!
