  1. 4 cups chicken or vegetable broth (32 oz.)
  2. 1 cup heavy cream (8 oz.)
  3. Optional: 2 cups scallops, peeled shrimp or cooked, diced chicken

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat and stir in Florida Sunshine Red Pepper Corn Chowder Mix ingredients.
  2. Return to a simmer, cover and cook for 15 minutes.
  3. Add heavy cream, continue cooking on low for 10 minutes with seafood or chicken, if desired.
  4. Turn off heat, let stand 5 minutes and serve!

    My mom and I first discovered this soup at Minnesota's Largest Candy Store on our way back and forth from South Dakota to Minneapolis. I fell in love with it. I moved to the south recently and we like things a little spicier down here so I always add a little Cheyenne Pepper Powder to the soup while it simmers. My family just loves this soup.

    I just had to take a minute to tell you how much our family, and friends enjoy your soups!!! My 28-year-old son needs gluten-free and my husband salt-free and so I make the tortilla soup often. I made four batches of it for a big Christmas party and everyone wanted my recipe. As I write, I am making the Red Pepper Corn Chowder!!! Thank you!
