Illinois Prairie Corn Chowder is a creamy delight bursting with bright yellow and super sweet corn (non GMO), red peppers and rice. Add diced potato and cream to make this top selling and versatile soup. A Sofi award winner!

Corn, Rice, Onion, Carrot, Bell Pepper, Celery, Chive, Bay Leaf.

  • 2 or 3 White potatoes
  • 8 cups Chicken broth
  • 2 cups Heavy or whipping cream
  • Optional: Add diced chicken breast, crabmeat, or clams to taste for meatier chowder.
  • Optional: 2 or 3 Ears of fresh corn

  1. Peel and dice potatoes and place in a 4-quart pot.
  2. Add chicken broth and bring to a boil.
  3. Reduce heat and stir in contents of Illinois Prairie Corn Chowder Mix. Return to a simmer, cover and cook for 45 minutes.
  4. Add heavy cream and heat uncovered on low for 30 minutes until slightly thickened.
  5. Remove bay leaf before serving. If desired add salt and pepper to taste.
  6. When fresh corn is available, cut the kernels off 2 or 3 cobs and set aside. Add cobs to the broth with the potatoes and continue with the recipe. Remove cobs and add the fresh corn with the cream.

    Besides the packet I used 6 c chicken broth, 3 large potatoes cubed, 3 ears fresh corn but I think canned or frozen would work too, and 2 c cream. I will definitely purchase this again and will now try other packet flavors.

    I used frozen diced potatoes and frozen corn instead of fresh. We like it topped with a sprinkle of Baco's chips. So delicious!

    This was super easy and absolutely delicious. I used two cans of corn drained. Otherwise, I followed the exact recipe. Thank you for a wonderful product!

    Crockpot Easy

    I love a crockpot recipe that’s basically dump and go. I used Yukon Gold potatoes since they don’t need to be peeled and added some ham I had in the freezer. Served it at a Lenten soup supper and got good reviews.

    This was absolutely delicious. I made it with hot Italian sausage and otherwise followed the recipe. I will definitely purchase this again. Yum!
