Father’s Day may have passed, but we’re still feeling all the warm, fuzzy feelings from celebrating two of our favorite dads—Matt and Jon Anderson! Chicken & Rice Soup: Comforting and Kid-Approved

Red Pepper Corn Chowder: Sweet, Savory, and Surprisingly Versatile

This soup has just a touch of heat—but is still Finn-approved! Whether you serve it as-is or jazz it up, it’s a vibrant and satisfying option.

Red Pepper Corn Clam Chowder

Jon’s personal spin on this soup includes clams, and it’s a quick, hearty meal you can whip up in under 30 minutes.

Ingredients:

Instructions:

  1. Bring broth and water to a boil.

  2. Reduce heat, add soup mix, and simmer for 15 minutes.

  3. Add cream and clams. Cook on low for 10 minutes.

  4. Season to taste and serve!


Florida Sunshine Breakfast Casserole (Featuring Our Red Pepper Corn Chowder Mix)

This genius holiday brunch idea comes from the Slice of Jess blog—but trust us, it’s worth making year-round.

Ingredients:

  • 1 Red Pepper Corn Chowder Mix

  • 4 cups chicken stock

  • 1.5 cups heavy cream

  • 8 large croissants, torn and toasted

  • 1 lb. ground Italian sausage

  • 6 eggs

  • ½ tsp salt

  • ½ tsp black pepper

  • 3 cups shredded Swiss cheese

  • Italian parsley + green onions, for garnish

Instructions:

  1. Prepare the soup according to package directions, adding extra cream. Let cool completely.

  2. Toast torn croissants at 400°F for 5 minutes.

  3. Brown the sausage while croissants toast.

  4. Whisk eggs, salt, and pepper into the cooled soup to create a custard base.

  5. Combine croissants, sausage, and 2 cups of cheese in a casserole dish. Refrigerate for 1 hour.

  6. Preheat oven to 350°F. Top with remaining cheese and bake for 45 minutes.

  7. Let rest for 10 minutes before serving. Garnish if desired.
