Navy Bean, Bell Pepper, Cornmeal, Sweet Potato, Onion, Corn, Ancho Chili, Paprika, Cumin, Garlic, Oregano, Coriander.

  • 6 cups Chicken broth
  • 2 cups Cooked chicken, cut up
  • 1 cup Salsa verde or green chili enchilada sauce (choose mild, medium or hot!)
  • 1 cup Shredded Monterey Jack/cheddar cheese
  • ½ cup Sour cream, optional

  1. In a 3 to 4-quart pot, bring 6 cups chicken broth to a simmer.
  2. Reduce heat and add contents of Arizona Sunset Enchilada Soup Mix, 1 cup salsa verde (or green chili enchilada sauce), and chicken.
  3. Return to a simmer, cover and cook for 25 minutes. Remove from heat.
  4. Add shredded cheese and serve with a lime wedge garnish. Or, for a creamier version, stir in sour cream and enjoy.

When reheating this soup, keep temperature low to avoid cheese sticking to the soup pot.

    We had this for Dinner 3 nights ago and it was delicious. We had the leftovers tonight and wow! The flavors had blended so well it was even better. We have a low sodium diet and I love the idea that I can add salt or not.

    We recently discovered your soup mixes and have tried three (Arizona Sunset Enchilada Soup, Idaho Outpost Potato Leek Soup & tonight, the Virginia Blue Ridge Broccoli Cheddar Soup). Whole family loved them all. Especially great for us is that the ones we have tried are vegetarian, so we can easily substitute vegetable broth/bouillon for chicken broth, and vegetarian protein options (by Boca, Gardein or Quorn) that mimic the meat the package calls for, and in half an hour we have delicious vegetarian soup! Next we will try the Jambalaya (made with What, ham substitute, and vegetarian "shrimp." Can't wait to try all the varieties! -Kerri Bradley

    For my family, even the suggestion of this for a meal makes our mouths water. We have varied the added ingredients a bit to fit our taste. But the lime juice is a unique taste that complements this incredibly. A must try!

    Anderson House soups are a go-to at our house. We love adding the fresh ingredients and knowing what’s in our meal. We made the enchilada soup and it is undeniably good - not too salty, just enough spice, and it gets better on day two! I opted to shred the chicken instead of chop, and it soaked up the soap - yum. It truly only takes 30 min!

    Just wanted to tell you how pleased I am with your product. I have celiac disease and am always looking for gluten-free foods that have a minimal amount of ingredients, are tasty and give me more control. I just made your Enchilada Soup for me and my husband and both of us loved it! This made me very happy because my husband does not have to be gluten-free but generally is when we cook at home. We crumbled some tortilla chips on top for a crunch factor! I just hope I can find more Frontier Soups to try. Will definitely get the Enchilada Soup again.
