  • 1 lb. ground round
  • 1 Tbsp. oil
  • 4 cups beef broth (32 oz.)
  • 1 can (10 oz.) tomatoes with green chiles
  • 1 Tbsp. Worcestershire sauce
  • (optional: a dollop of sour cream on each serving)

  1. In a 4-quart pot, heat oil over medium high heat.
  2. Crumble and brown ground beef.
  3. Stir in goulash mix. Add broth, bring to a boil, and then reduce to a simmer.
  4. Cover and cook for 20 minutes.
  5. Stir in tomatoes and Worcestershire, cover, and continue to simmer for 20 minutes.
  6. Place in bowls with sour cream on top and serve!
  7. Freezes well, if prepared ahead.

    I am not a big fan of ground beef, so I did a nice stew meat instead. I can't do a lot of tomato (Thank you, Acid Reflux) but I subbed 6 Oz of roasted squash and 1/3 c veg broth for the tomatoes suggested. I also pinched in some Allspice and deglazed the pan after searing the beef with a good Pinot Noir. Freaking 5 stars!!!

    I used leftover chuck roast cooked in a crockpot. Just shredded it, added half a cup of leftover broth. Very good and great way to use up leftovers. Adding a dollop of sour cream gives it a nice creaminess.

    Great soup! I added 3/4 lb browned Italian breakfast sausage (in addition to the 1 lb ground beef), 1/4 cup sundried tomato pesto, and tripled the Worchestershire sauce (reduced sodium version). I realized too late that I was out of Rotel so I used a can of regular diced tomatoes and added a 4 oz can of diced green chiles. Not quite as hot as Rotel, but still quite tasty. I also made this in the slow cooker since I'm not a fan of standing over the stove, even for 20 minutes. Add all ingredients except tomatoes to 3 or 4 qt slow cooker. Cook on high 3 hours, add tomatoes and cook on low for another 1-2 hours. Came out great!

    I actually cooked it in my instapot. I just dumped everything in with a pound and a half of ground beef and it was so yummy! We ate it with GF bread/crackers and sweet potatoes and it was a perfect meal!

    Just wanted to let you know that in the above mix we used cubed sirloin steak, approximately 1 1/4 lbs, and it was fabulous! Just love your mixes!

    This particular mix was so easy to make and delicious. Had a late work day and this saved the day. I love that these soups don't have salt yet are so tasty. I keep several on hand for days like this when I don't feel like cooking but don't want to eat take-out.
