Thai Style Golden Peanut Soup

This Thai inspired peanut soup has just the right amount of heat and is ready in 30 minutes. Add peanut butter and chicken and serve as a main course or appetizer soup.

Sweet Potato, Bell Pepper, Onion, Celery, Curry Powder (Coriander, Fennel, Cumin, Turmeric, Fenugreek, Red Pepper, Black Pepper), Basil, Green Onion, Cayene Pepper.

  • 6 cups chicken or vegetable broth (48 oz.)
  • 1 cup creamy peanut butter
  • 2 cups shredded, cooked chicken (8-10 oz.)
  • (optional: 1 lb peeled, deveined shrimp instead of chicken. For a party, garnish each serving with a sprinkle of roasted peanuts and fresh cilantro.)

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat and stir in soup mix.
  2. Return to a simmer, cover and cook for 15 minutes.
  3. Stir in peanut butter until thoroughly blended.
  4. Add chicken and continue cooking, covered, on low for 10 minutes.
  5. Turn off heat, let stand covered for 5 minutes, stir, and serve.

    My dad's most favorite soup in his 96 years of life

    I wanted to let you know about an experience I had with Frontier's soups. I recently returned from a summer trip to Saugatuck, Michigan. While I was there visiting, I stopped in one of the local stores called "The Butler's Pantry". While browsing through the store, I came upon a display for Frontier Soups. The unusual flavors intrigued me & I purchased several: "Golden Peanut Soup", "New Orleans Style Jambalaya", & the "Pennsylvania Woodlands Mushroom Barley" soups. Upon returning from Saugatuck, I decided to make one of your soup mixes & chose the "Golden Peanut Soup". After a short time, the smell of something delicious started wafting throughout my house and caught the attention of my 96 year old father. He could not wait to taste the soup! I added shrimp, instead of chicken, & we both sat down to a large bowl of the soup. I wish I had a tape recording of my father's comments as he not only devoured his bowl of soup, but seconds as well! I am sure if I would've let him, he'd have eaten the entire pot! (I was lucky to get one bowl for myself!) To say this soup was my dad's most favorite in his 96 years of life would be an understatement. He has asked me when I am retuning to Saugatuck to purchase more of the soup mix. I was happy to find Frontier Soups on Facebook & glad to see I can order additional soups from your webpage.

    Made your Peanut Soup for dinner. OMG, it was so delicious. Added a little half n half and it was even better. Great soup.
