  • 6-8 slices bacon
  • 6 cups chicken broth (48 oz.)
  • 1 large russet (baker) potato or other white potato (peeled and cut into 1/2 inch cubes, 2 cups)
  • 1 cup heavy cream (8oz.)
  • Optional: shredded cheddar cheese and/or sour cream

  1. Slice uncooked bacon into half-inch pieces and place in bottom of 4-quart pot.
  2. Over medium heat, sauté bacon until browned and crispy, 8-12 minutes.
  3. Remove bacon, set aside on paper towel, and discard excess bacon grease.
  4. Peel and cube potatoes. Add cubbed potatoes to the pot, stir gently into residual bacon grease, add chicken broth and bring to a boil.
  5. Stir in soup mix. Return to a simmer, cover and cook for 30 minutes.
  6. Stir in heavy cream, heat uncovered on low for 5 minutes.
  7. Top each serving with crumbled bacon.
  8. Add shredded cheese and/or sour cream, if desired.

*soup will continue to thicken, add broth, milk or water as needed.

    Just had to let you know that this potato soup is the best soup I’ve ever tasted. I’ve made it four times now and my family loves it (there are only three of us). I found this mix at Clover Nook Farms in Bethany, CT. Tonight, the fourth time, I added some corn (from Clover Nook Farms) and it was fantastic. Thank you for bringing such wonderful flavors together in one hearty soup. We’re going back for more.

    Was hoping to really like this soup. I was disappointed. Not much flavor. Made it exactly as stated on package. Disappointing. ***Anderson House Reply*** So sorry you did not love this as it's a favorite around here. Curious if you used low-sodium or organic broth? Salt does give this soup a lot more flavor.

    I stay away from heavy cream soups. Used 2% milk and 2 potatoes and it worked just fine. Great flavor!

    I tried the Loaded Potato Soup for the first time last night, Delicious! I was surprised at the freshness and savory taste of the packaged ingredients. I followed the directions exactly as written. I will be buying more varieties.

    Loved it. Got it as a gift. Added some carrots and celery. Was tasty and easy to make. Gonna try the Arizona enchilada next. Gotta order it first.
