  • 6-8 slices bacon
  • 6 cups chicken broth (48 oz.)
  • 1 large russet (baker) potato or other white potato (peeled and cut into 1/2 inch cubes, 2 cups)
  • 1 cup heavy cream (8oz.)
  • Optional: shredded cheddar cheese and/or sour cream

  1. Slice uncooked bacon into half-inch pieces and place in bottom of 4-quart pot.
  2. Over medium heat, sauté bacon until browned and crispy, 8-12 minutes.
  3. Remove bacon, set aside on paper towel, and discard excess bacon grease.
  4. Peel and cube potatoes. Add cubbed potatoes to the pot, stir gently into residual bacon grease, add chicken broth and bring to a boil.
  5. Stir in soup mix. Return to a simmer, cover and cook for 30 minutes.
  6. Stir in heavy cream, heat uncovered on low for 5 minutes.
  7. Top each serving with crumbled bacon.
  8. Add shredded cheese and/or sour cream, if desired.

*soup will continue to thicken, add broth, milk or water as needed.

    I made this soup tonight and omitted the bacon but added a small cut up ham steak. This soup was very flavorful, hearty because of the cream, and oh so yummy on a cold and blustery New England evening. By far the best "packaged soup" I've ever purchased!

    This soup was easy to put together, but needed a little blend with my immersion blender to create a creamy consistency. We left it chunky, but this took it from meh to outstanding. For those like me who can’t do cream, lactose free milk and cheese did the trick!

    My husband is home sick and I used bone broth, some carrots and celery. Can’t imagine anyone not liking this unless they did something wrong.

    Got your Potato soup in my Christmas stocking and what a hit it was. Have since made corn chowder adding Bacon and "WHEW" another winner.

    This was so yummy! I dumped everything in the crock pot and put on low until potatoes were soft, I used evaporated milk to thicken and it worked out great! Will be reordering!

    This is sooooo good. My friends and I made this soup, and two others that are 100% made from scratch. We ate this for the dinner that day. We dumped a whole package of bacon into the soup and man… did it hit the spot on cold January days! I plan on buying a big batch of this mix.
