Pennsylvania Woodlands Mushroom Barley Soup uses a shiitake mushroom, barley, and vegetable blend to make the base for a classic soup. Add a handful of fresh mushrooms and sherry, if desired. A quick, rustic meal ready to enjoy in only 30 minutes.

Barley, Shiitake Mushroom, Onion, Carrot, Bell Pepper, Parsley, Nutmeg, Mustard and Thyme.

  • ½ to 1 lb. sliced, fresh mushrooms (any variety)
  • 2 Tbsp. butter or margarine
  • 6 cups chicken or vegetable broth (48 oz.)
  • Freshly ground black pepper, to taste
  • Optional: ½ lb. ground beef (chuck or round)

  1. In a 3 or 4-qt pot, melt butter and gently sauté mushrooms (and ground beef, if using) over medium heat for 5 minutes.
  2. Stir in contents of Pennsylvania Woodlands Mushroom Barley Soup Mix.
  3. Add broth, bring to boil, reduce heat and simmer, covered, for 20 minutes.
  4. Add pepper to taste and serve!

    I made this with soup mix with beans and some dried porcini mushrooms that I had in the pantry. Pre-soaked the mushrooms and beans, then cooked them in vegetable broth and added the soup mix once the beans were about halfway cooked. I added extra vegetable broth and it was still hearty and delicious.

    I love this "soup kit", as my family calls it... quick easy and absolutely delicious... I'm ordering a few for the pantry stock... I added extra mushrooms instead of ground was gone in a flash...

    Dried soup mix in the past has not appealed to me. Now, I'm on line buying more of Pennsylvania Woodlands Mushroom Barley!! I added mushrooms, ground beef , a little sausage and sweet onion. To feed a large family, prepare Rice a Roni, beef flavor, and add to finished Barley Soup. Yum!!

    Instead of ground beef, I added about 11 + ozs. of loose hot Italian sausage. The soup was tangy but delicious!

    Great Alternative To Creamy Mushroom Soups

    This is a great option if you're looking for a brothier mushroom soup. It came together so easily, which is especially appreciated after I get off work and am on dinner duty. I didn't find it really needed any adjustments aside from the usual salt and pepper. It's great as is! Would love to add the sherry next time as suggested.
