  • 8 oz Sliced bacon (or 8 oz diced ham)
  • 1 Purple onion, diced (optional)
  • 10 cups Beef broth
  • 1 pt Fresh (or 1 box frozen) brussel sprouts, quartered (or 2 cups shredded cabbage)
  • 29 oz Can diced tomatoes

  1. Pick through the beans. Remove discolored, shriveled beans and any foreign material. Rinse well.
  2. Cut bacon in 1/2 inch pieces and sauté for 10 minutes over medium heat in a 6 or 8-quart pot until nearly crisp.
  3. Add onion, if using, and sauté 5 minutes.
  4. Stir in contents of New York Corner Café Minestrone Mix vegetable packet and toss lightly.
  5. Add beans, beef broth and water to pot.
  6. Bring to a boil, reduce heat and simmer covered for 1 hour.
  7. Add tomatoes and brussel sprouts (or shredded cabbage). Cover and cook for 20 minutes.
  8. Add pasta and cook, uncovered, for 10 minutes.
  9. Optional: Garnish with grated parmesan cheese.

    I have the soup cooking right now. Being Italian and it being cold out, it's the perfect day for soup. It looks good so far!

    I had to adapt this a bit since I didn't have any bacon on hand. I used no salt added chicken broth instead of beef (beef broth seems to have no flavor). I used smoked ham hock in place of the bacon, and chopped up two links of Hatch chile smoked sausage. I used cabbage instead of brussel sprouts and sauteed the cabbage in butter, then added to the soup during the last hour (slow cooker instructions). Even with all the substitutions it came out quite good.

    I can barely boil water and your soup kits make me seem like a five star chef. My husband actually dives right in without his normal hesitation haha. I have been telling everyone that they must try them. Another bonus is that you are in my hometown. Keep up the great work, Kris B.
