This recipe comes to us from our friend Jess at Slice of Jess, who loves it so much she makes it year-round. We couldn’t agree more—it’s the kind of dish that turns simple ingredients into something special.

Ingredients

  • 5 oz Frontier Soups Virginia Blue Ridge Broccoli Cheddar Soup Mix
  • 1 cup heavy cream
  • 1/4 cup chicken or vegetable stock
  • 30 oz frozen shredded hash browns, thawed
  • 12 oz mild cheddar cheese, shredded and divided
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup butter, melted (1 stick)
  • 1 cup sour cream
  • Chopped green onions, for garnish

Instructions

  1. In a large bowl, combine the soup mix, heavy cream, and stock. Let it sit for at least 10 minutes to allow the vegetables and seasonings to hydrate.
  2. Stir in the thawed hash browns, sour cream, half of the cheese, salt, and pepper until evenly mixed.
  3. Pour the melted butter into a 9x13-inch casserole dish, tilting to coat all sides. Spread the potato mixture evenly in the dish and top with the remaining cheese.
  4. Bake at 350°F for 45–50 minutes, until the top is bubbly and golden. Let rest for 10 minutes before serving.
