Pacific Rim Gingered Carrot & Coconut Soup - Standard Recipe

You Will Need

  • Pacific Rim Gingered Carrot & Coconut Soup Mix
  • 2 lbs. whole carrots, scrubbed, not peeled
  • 4 cups vegetable or chicken broth (32 oz.)
  • 1-2 Tbsp. brown sugar
  • 1 can (14 oz.) unsweetened coconut milk (omit for a simple pureed version or substitute cream)

Here's What You Do

  1. Wash thoroughly and cut carrots into 1-inch chunks. Remove ends.
  2. In a 3 or 4-quart pot, bring broth and carrots to a boil. Reduce heat and stir in soup mix and brown sugar.
  3. Return to a simmer, cover, and cook for 30 minutes.
  4. Using a hand immersion blender or hand mixer in the soup pot, or in batches in a food processor, puree soup leaving some little pieces for texture.
  5. Add coconut milk, cook on low 5 minutes, and serve.

Reducing Sodium?

All of our mixes contain no added salt, only what occurs naturally in the ingredients. To further reduce sodium, use a low-sodium broth, bone broth, or stock. Organic broths often contain less sodium, and homemade broth/stock gives you the most control.

Boosting Protein?

Try adding blended cottage cheese, red lentils, chickpeas, or white beans directly to the soup. Top with toasted nuts, seeds, or chicken/shrimp for extra sustenance. Switching to chicken bone broth further increases protein compared to vegetable broth.

Cutting Calories/Fat?

To cut fat, substitute lite coconut milk for coconut milk, or omit coconut milk for a simple pureed soup.

More Veggies?

Add 1 cup diced leeks and/or 1 diced sweet potato with the soup mix

Add fiber-dense ingredients like red lentils, chia seeds, or cauliflower, or add chewy textures with cooked quinoa or brown rice.

Gremolata Garnish:
Blend lemon peel, Italian parsley, garlic, olive oil, and freshly ground black pepper in a food processor until finely minced. Spoon over each serving for a bright, zesty Italian-style topping.
Shortcut: A small container of tabbouleh from the deli also works beautifully as a quick garnish.

You Will Also Need:

  • 1/2 cup packed Italian parsley
  • 3 garlic cloves
  • 1 tablespoon olive oil
  • Freshly ground black pepper

Here’s What You Do:

  1. Remove peel from lemon with a vegetable peeler.
  2. Put lemon peel and remaining ingredients in bowl of food processor.
  3. Run processor until ingredients are finely minced.
  4. Place a spoonful on each serving of carrot soup for a zesty Italian garnish in any season.

Chilled Carrot Soup:
Prepare the soup a day ahead and refrigerate. Serve chilled with a dollop of yogurt and a sprinkle of chopped pecans for a refreshing summer appetizer.

Sweet Potato & Mango Twist:
Add sweet potato for extra body and natural sweetness. For a tropical spin, swap the brown sugar for fresh mango and garnish with chopped peanuts. A spoonful of curry or Massaman paste adds warm Thai-inspired flavor.

Sweet Potato Add-Ins:
Stir in diced sweet potato while cooking, or add applesauce for gentle sweetness. Lime and cilantro also make bright finishing touches.

Hearty Chicken Version:
Add shredded chicken breast and diced sweet potato for a more filling, protein-rich variation.
