Celebrate Southwestern Flavors During Cinco de Mayo

Cinco de Mayo is Spanish for "May 5th" or literally, "Five of May". In the United States, it is sometimes mistaken as Mexico's Independence Day but actually celebrates the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862.
Although it was not a major strategic win in the overall war against the French, the Mexican Army was able to overcome overwhelming odds by defeating a much larger and better equipped French Army. The victory represented a significant morale boost to the Mexican people and bolstered the resistance movement.
